
Spicy Potato Salad
With all this hot weather we’re having here in the UK, it would be remiss of me to include a recipe that didn’t have ‘salad’ in the title.
Though it has to be said, this Spiced Potato Salad would hold its own in the winter months also.
This recipe is so easy to throw together, and if I’m cooking new potatoes, then I’ll add in extra so that I can make this potato salad the next day.
It’s a recipe I’ve been making for years, so I had to rack my brains to remember where the recipe came from. I finally found it in an old Slimming World cookbook called, Food Glorious Food.
I ran the potato salad recipe through my nutrition software to figure out the calories for you because the cookbook only referred to ‘Sins’. A portion comes in around 165 calories.

New Potatoes
Potatoes have fibre in which can help keep hunger at bay. They also contain Phosphorous which helps release energy.
And not forgetting the other nutrients, potassium (essential for muscles, nerve cells, heart and kidneys), calcium, magnesium and folic acid.
Low-fat Yoghurt
Low-fat yoghurt is a good source of carbohydrate and protein, and it has calcium and magnesium for healthy bones and teeth as well as vitamin D, which helps maintain normal muscle function.

INGREDIENTS

Boil the new potatoes in salted water until tender.

Drain and cool and then mix in the spring onions and chopped tomatoes

Blend the yoghurt with the curry powder, ground cumin, ground coriander and turmeric.

Mix the yoghurt dressing with the potatoes and scatter with fresh chopped coriander leaves.
